One of my all-time favorite things to do, whether it's a holiday weekend or not--is COOK OUT. And when I do it has to be on a charcoal grill--no gas. Charcoal adds a flavor to whatever you're grilling that gas can't. Plus--if you're going to grill with gas--you may as well just cook on a stove. My opinion. Anyway--the holiday weekend is upon us, and with it comes nice hot sunny west Texas weather--so the grills all over the Permian Basin are going to be humming. Question is--can we smell what you're cookin'? (OK--maybe not. You're not Dwayne "The Rock" Johnson after all!)....

I'll be doing steaks on Saturday. I have a favorite place in Midland I like to go get meat (no shameless free plugs, but if you ask me I'll tell ya)... So I pick up my filets--and I ALWAYS marinate. Thing is--I haven't been able to FIND my favorite marinade here in Texas. So when the wife and I go back to Illinois in October for a visit-I'm grabbing a bunch of it and mailing it to myself. It's a flavor / brand of the Grill Mates marinades that NO ONE carries here. The Grill Mates Peppercorn and Garlic Marinade. Trust me when I tell you that letting your meat sit in this marinade for at least 45 minutes in the fridge--it'll be falling off the fork tender and very flavorful. You're welcome. Although if you're going to try it you'll have to order it on line as NONE of the grocery stores here carry that one.
